4 medium zucchinis, spiralized into noodles

1 cup cherry tomatoes, halved

1 cup fresh basil leaves

1/4 cup pine nuts, toasted

2 cloves garlic, minced

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/2 cup olive oil

Salt and pepper to taste

1 tablespoon lemon juice

Red pepper flakes (optional, for heat)

Instructions
 

Make the Pesto: In a food processor, combine basil leaves, toasted pine nuts, minced garlic, Parmesan cheese (or nutritional yeast), and lemon juice. Process until blended.

    Add Olive Oil: While the processor is running, drizzle in the olive oil until the mixture is smooth and creamy. Season with salt and pepper to taste. Set aside.

      Prepare Zucchini Noodles: Spiralize the zucchinis into noodles using a spiralizer. Place the noodles in a large pot of boiling water for about 1-2 minutes to slightly soften them.

        Combine Ingredients: Drain the zucchini noodles and immediately toss them with the prepared basil pesto. It’s important to do this while the noodles are warm to help absorb the flavors.

          Add Cherry Tomatoes: Gently fold in the halved cherry tomatoes to the zucchini and pesto mixture.

            Serve: Transfer the zesty zucchini noodles to serving plates and finish by sprinkling red pepper flakes on top, if desired.
