1 cup snap peas, trimmed

1 carrot, julienned

3 green onions, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Prepare the Zucchini Noodles: Spiralize the zucchinis using a spiralizer and set aside. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips.

    Heat the Oils: In a large skillet or wok, heat the olive oil over medium-high heat. Once hot, add the sesame oil for extra flavor.

      Cook the Aromatics: Add the minced garlic and ginger to the skillet, sautéing for about 30 seconds until fragrant. Be careful not to burn them.
