Zesty Grilled Chicken with Watermelon Salad

Ingredients
  

4 boneless, skinless chicken breasts

1 tablespoon olive oil

2 tablespoons lime juice

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

4 cups of watermelon, cubed

1 cucumber, diced

1/4 red onion, finely chopped

1/4 cup fresh mint leaves, chopped

2 tablespoons feta cheese, crumbled

Additional lime juice for dressing

Optional: Arugula or mixed greens for serving

Instructions
 

In a bowl, combine olive oil, lime juice, smoked paprika, garlic powder, cumin, salt, and pepper to create a marinade.

    Add the chicken breasts to the marinade, ensuring they are thoroughly coated. Cover and marinate in the fridge for at least 30 minutes (or up to 4 hours for more flavor).

      Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard excess marinade.

        Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is fully cooked. Remove from the grill and let rest for 5 minutes before slicing.

          While the chicken is grilling, prepare the watermelon salad. In a large bowl, combine the cubed watermelon, diced cucumber, chopped red onion, and mint leaves.

            Drizzle a little lime juice over the salad and toss gently to combine.

              Serve the sliced grilled chicken on a bed of arugula or mixed greens, topped with the watermelon salad. Sprinkle feta cheese over the top and garnish with extra mint if desired.
