1 pound (450g) baby carrots, rinsed and trimmed

2 tablespoons olive oil

2 tablespoons zaatar spice blend

1 teaspoon honey (optional)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Carrots: In a large bowl, combine the baby carrots with the olive oil, zaatar spice, honey (if using), salt, and black pepper. Toss until the carrots are evenly coated with the mixture.
