2 cups Greek yogurt (plain or vanilla flavor)

1 cup granola (your favorite mix)

1 cup mixed berries (strawberries, blueberries, raspberries)

2 tablespoons honey or maple syrup

½ teaspoon vanilla extract (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium bowl, mix the Greek yogurt with honey (or maple syrup) and vanilla extract until smooth and well combined.

    Wash the mixed berries thoroughly. If using strawberries, slice them into smaller pieces.

      Take a tall glass or a parfait dish, and start layering your parfait. Start with a layer of yogurt at the bottom, about a third of the total amount.

        Follow with a layer of granola, approximately half of what you have in total.

          Next, add a layer of the mixed berries, distributing them evenly over the granola.

            Repeat the layers: another third of yogurt, the rest of the granola, and top it off with the remaining berries.

              Finish by drizzling a little more honey on top if desired, and garnish with fresh mint leaves for an added touch.

                Serve immediately for a crunchy parfait or prepare in advance by covering and refrigerating (up to 2 hours) to soften the granola slightly.
