8 oz (225g) spaghetti or your favorite pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

8 oz (225g) mixed mushrooms (shiitake, cremini, and button), sliced

2 tablespoons soy sauce

1 tablespoon miso paste (white or yellow)

1 teaspoon mirin (optional)

1 teaspoon sesame oil

1 teaspoon red chili flakes (adjust to taste)

2 green onions, chopped

1 tablespoon toasted sesame seeds

Fresh basil or shiso leaves for garnish (optional)

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve a cup of pasta water, then drain the pasta and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion. Sauté for about 2-3 minutes, or until the onion becomes translucent and the garlic is fragrant.

      Add Mushrooms: Stir in the sliced mushrooms and continue to sauté for another 5-7 minutes, or until the mushrooms are cooked down and lightly golden.

        Create the Sauce: In a small bowl, mix together the soy sauce, miso paste, mirin (if using), and sesame oil until smooth. Pour this mixture into the skillet with the mushrooms.

          Combine Pasta and Sauce: Add the cooked spaghetti to the skillet. Toss everything together, adding reserved pasta water a little at a time to help the sauce coat the pasta evenly. Season with red chili flakes, salt, and pepper to taste.

            Finishing Touches: Remove the skillet from heat. Stir in the chopped green onions and sprinkle with toasted sesame seeds. Toss gently to combine all ingredients.

              Serve: Plate the pasta warm, garnishing with fresh basil or shiso leaves if desired.
