1 large head of romaine lettuce, chopped

1 cup of cherry tomatoes, halved

1 cup of croutons (store-bought or homemade)

1/4 cup of nutritional yeast

1/4 cup of vegan mayonnaise

2 tablespoons of Dijon mustard

1 tablespoon of capers, chopped

2 tablespoons of lemon juice

1 teaspoon of garlic powder

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large salad bowl, place the chopped romaine lettuce and cherry tomatoes. Toss to combine.

    In a separate small bowl, whisk together the vegan mayonnaise, nutritional yeast, Dijon mustard, chopped capers, lemon juice, garlic powder, salt, and black pepper until smooth and creamy.

      Pour the dressing over the lettuce and tomatoes. Gently toss everything together until the salad is well coated in the dressing.

        Add the croutons to the salad and lightly toss again to distribute them evenly.
