4 boneless, skinless chicken breasts

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach leaves, fresh

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Start by seasoning the chicken breasts with salt, pepper, and Italian herbs on both sides.

    In a large skillet over medium heat, add olive oil and allow it to heat up.

      Add the chicken breasts to the skillet and cook for about 5-7 minutes on each side, or until golden brown and fully cooked. Remove the chicken from the skillet and set aside.

        In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.

          Add the cherry tomatoes to the skillet and cook for 3-4 minutes, gently pressing down on them to release their juices.

            Stir in the fresh spinach and allow it to wilt, about 1-2 minutes.

              Pour in the heavy cream, and bring to a simmer, stirring until combined.

                Gradually stir in the grated Parmesan cheese until the sauce is creamy and smooth.

                  Return the cooked chicken to the skillet, spooning the sauce over the chicken to coat it. Let it simmer for an additional 2-3 minutes to meld the flavors.

                    Garnish with fresh basil before serving.
