2 slices whole grain bread

4 ounces sliced turkey breast

1 ripe avocado, sliced

2 tablespoons Greek yogurt (or mayonnaise)

1 teaspoon Dijon mustard

1 cup baby spinach

1 small tomato, sliced

Salt and pepper to taste

Optional: sliced cheese (such as cheddar or provolone)

Instructions
 

In a small bowl, mix the Greek yogurt (or mayonnaise) with the Dijon mustard. This will be your flavorful spread.

    Toast the whole grain bread slices until golden brown.

      While the bread is toasting, slice the avocado and tomato.

        Once the bread is ready, spread a generous layer of the yogurt-mustard mixture on one side of each slice of toast.

          Start layering the turkey breast on one slice of bread, followed by the sliced avocado and tomato.

            Add a handful of fresh baby spinach for crunch and nutrition. If desired, place a slice of cheese on top.

              Sprinkle a pinch of salt and pepper over the layers for added flavor.

                Close the sandwich with the second slice of bread, spread side down.

                  For an added touch, press the sandwich lightly and cut it in half at a diagonal for presentation.
