12 oz penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

4 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

1/2 cup tomato sauce

1 teaspoon sugar (to balance acidity)

1 teaspoon dried oregano

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

1 cup fresh basil leaves, chopped

Grated Parmesan cheese for serving

Instructions
 

Cook the penne pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.

    In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for about 6-8 minutes, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      In the same skillet, add minced garlic and sauté for about 1 minute until fragrant, making sure not to burn it.

        Stir in the diced tomatoes (with juices), tomato sauce, sugar, dried oregano, and crushed red pepper flakes. Bring the mixture to a simmer and let it cook for about 10 minutes, stirring occasionally.

          Add the cooked chicken back into the skillet along with the chopped basil. Stir to combine and let everything heat through for another 2-3 minutes. Adjust seasoning with more salt and pepper as needed.

            Add the cooked penne pasta to the skillet, tossing until the pasta is well-coated with the sauce and evenly mixed with the chicken.
