1 block (14 oz) firm tofu, drained and crumbled

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup baby spinach

1 teaspoon turmeric powder

1 teaspoon cumin

Salt and pepper to taste

2 tablespoons nutritional yeast (optional, for cheesy flavor)

Fresh herbs (like chives or parsley) for garnish

Instructions
 

In a large skillet, heat the olive oil over medium heat.

    Add the diced onion and sauté until it becomes translucent, about 3-4 minutes.

      Stir in the minced garlic and bell pepper; cook for another 3 minutes until the peppers soften.

        Add the crumbled tofu to the skillet, breaking it apart with a spatula.

          Sprinkle in the turmeric powder, cumin, salt, and pepper. Stir well to combine all ingredients and let it cook for about 5 minutes, allowing the tofu to absorb the flavors.

            Fold in the baby spinach and cook until just wilted, about 2 minutes.

              For a cheesy flavor, sprinkle in the nutritional yeast and mix thoroughly.

                Remove from heat and taste; adjust seasoning if necessary.

                  Serve hot, garnished with fresh herbs for added brightness.
