Ingredients

1 cup strong brewed coffee, cooled

1 cup mascarpone cheese

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon pure vanilla extract

12 ladyfinger cookies

2 tablespoons cocoa powder (for dusting)

Dark chocolate shavings (for garnish)

Instructions

In a mixing bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.

Gently fold in the mascarpone cheese into the whipped cream until well combined, being careful not to deflate the mixture.

Take the cooled coffee and dip each ladyfinger into it briefly, ensuring they are moist but not soggy.

In a clear glass or parfait cup, place a layer of dipped ladyfingers at the bottom.

Add a generous layer of the mascarpone mixture on top of the ladyfingers.

Repeat the layering process, adding another layer of dipped ladyfingers followed by the mascarpone mixture until the glass is filled, finishing with the mascarpone on top.

Chill the parfaits in the refrigerator for at least 2 hours to firm up the layers.

Before serving, dust the top with cocoa powder and garnish with dark chocolate shavings for an elegant touch.
