1 cup fresh raspberries

1 cup mascarpone cheese

1 cup heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup brewed and cooled espresso or strong coffee

1 tablespoon raspberry puree (to drizzle)

12 ladyfinger biscuits

Cocoa powder for dusting

Fresh mint leaves for garnish

Instructions
 

In a medium bowl, whisk together the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy. Set aside.

    In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.

      In a shallow dish, pour the brewed espresso, allowing it to cool slightly. Dip each ladyfinger into the coffee for about 1-2 seconds, ensuring they absorb flavor but don’t become too soggy.

        In a 9x9 inch square dish or similar sized trifle dish, place half of the dipped ladyfingers at the bottom.

          Spread half of the mascarpone mixture over the layer of ladyfingers, smoothing it with a spatula.

            Distribute half of the fresh raspberries evenly over the mascarpone layer.

              Repeat the process with another layer of dipped ladyfingers, followed by the remaining mascarpone mixture and raspberries.

                Cover and refrigerate for at least 4 hours, ideally overnight, to allow the flavors to meld.

                  Just before serving, dust the top with cocoa powder and drizzle with raspberry puree for an elegant finish.

                    Garnish with fresh mint leaves on top for a burst of color and freshness.
