1 ½ cups strong brewed coffee, cooled

2 tablespoons vanilla extract

3 large egg yolks

½ cup granulated sugar

1 cup mascarpone cheese

1 cup heavy whipping cream

24 ladyfinger cookies

2 tablespoons cocoa powder, for dusting

Dark chocolate shavings, for garnish

Instructions
 

In a mixing bowl, whisk together the egg yolks and granulated sugar until pale and creamy.

    Gently fold in the mascarpone cheese and vanilla extract to the egg mixture until smooth.

      In a separate bowl, whip the heavy cream until stiff peaks form. Carefully combine the whipped cream with the mascarpone mixture, folding it gently to maintain airiness.

        In a shallow dish, combine the cooled brewed coffee and an additional splash of vanilla extract.

          Dip each ladyfinger cookie quickly into the coffee mixture, ensuring they are moist but not soggy.

            Layer half of the coffee-dipped ladyfingers in the bottom of a rectangular dish or individual dessert cups.

              Spread half of the mascarpone mixture over the ladyfingers evenly.

                Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture.

                  Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

                    Before serving, dust the top with cocoa powder and sprinkle with dark chocolate shavings for an added touch.
