1 cup strong brewed coffee, cooled to room temperature

3 large egg yolks

1/2 cup granulated sugar

1 cup mascarpone cheese

1 cup heavy cream

1 teaspoon vanilla extract

20-24 ladyfinger cookies

Unsweetened cocoa powder, for dusting

Dark chocolate shavings (optional, for garnish)

Instructions
 

In a medium bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy, about 2-3 minutes.

    Gently fold in the mascarpone cheese until fully incorporated, ensuring no lumps remain.

      In another bowl, whip the heavy cream and vanilla extract until stiff peaks form.

        Carefully fold the whipped cream into the mascarpone mixture, being careful not to deflate the cream. Set aside.

          Quickly dip each ladyfinger into the cooled coffee, just enough to soak them without becoming soggy. Arrange a layer of soaked ladyfingers in a 9x9 inch dish.

            Spread half of the mascarpone mixture over the layer of ladyfingers evenly.

              Repeat the process with another layer of soaked ladyfingers and top with the remaining mascarpone mixture.

                Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

                  Before serving, dust the top generously with unsweetened cocoa powder. Optionally, garnish with dark chocolate shavings.
