Ingredients

4 boneless, skinless chicken breasts

2 cups cherry tomatoes, halved

1 cup fresh basil, chopped

4 cloves garlic, minced

1 medium onion, diced

2 tablespoons olive oil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh mozzarella cheese, sliced (optional for topping)

Instructions

Prep the Chicken: Season the chicken breasts with salt, pepper, and dried oregano on both sides. Let them sit for about 15 minutes to absorb the flavors.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

Cook the Chicken: Push the onions and garlic to the side of the skillet and add the seasoned chicken breasts. Cook for about 5-7 minutes on one side until golden brown, then flip them over.

Add Tomatoes and Basil: Once flipped, add the halved cherry tomatoes and chopped basil around the chicken in the skillet. Sprinkle red pepper flakes if using. Cover and cook for another 7-10 minutes, or until the chicken is cooked through and the tomatoes have softened.

Melt the Cheese (Optional): If you're using mozzarella, place a slice on each chicken breast during the last 2-3 minutes of cooking, covering the skillet to allow the cheese to melt.

Serve: Once cooked, remove from heat. Let the chicken rest for a few minutes before serving to retain moisture.

Prep Time: 15 minutes, Total Time: 30 minutes, Servings: 4 |

                - Presentation Tips: Serve the chicken on a platter topped with the sautéed tomatoes and fresh basil. Drizzle with a bit of olive oil and a sprinkle of sea salt for an elevated look. Pair with a side of quinoa or a fresh green salad for a complete meal.
