8 oz rice noodles

1 cup broccoli florets

1 red bell pepper, thinly sliced

1 cup shredded carrots

2 green onions, chopped

1/2 cup unsweetened peanut butter

1/4 cup soy sauce (low sodium)

2 tablespoons honey or maple syrup

2 tablespoons lime juice

1 tablespoon sesame oil

1 teaspoon sriracha (adjust for spice level)

Chopped peanuts for garnish

Fresh cilantro for garnish

Instructions
 

Start by cooking the rice noodles according to package instructions. Drain and set aside, tossing with a little sesame oil to prevent sticking.

    In a large pot, bring water to a boil and blanch the broccoli florets for about 2-3 minutes until vibrant and tender-crisp. Remove and drain.
