Ingredients

1 lb ground beef (or ground chicken for a lighter option)

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1/4 cup soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon brown sugar (or honey for a touch of sweetness)

1 large egg

Salt and pepper to taste

Sesame seeds for garnish

Extra green onions for garnish

Instructions

In a large mixing bowl, combine the ground meat, breadcrumbs, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, brown sugar, and the egg. Season with salt and pepper to taste.

Mix all ingredients until just well combined—be careful not to overmix, as this can make the meatballs tough.

Preheat your oven to 400°F (200°C).

Shape the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.

Bake for 20-25 minutes or until the meatballs are cooked through and have a nice golden color.

While the meatballs are baking, prepare the teriyaki sauce. In a small saucepan over medium heat, combine 1/4 cup soy sauce, 2 tablespoons brown sugar, and 1 tablespoon sesame oil. Bring to a simmer, stirring constantly until the sauce thickens slightly (about 3–5 minutes).

Once the meatballs are done, drizzle the teriyaki sauce over them while still on the baking sheet, tossing to coat them evenly.

Alternatively, you can serve the sauce on the side for dipping.

Garnish with sesame seeds and extra chopped green onions before serving.
