4 boneless, skinless chicken breasts

2 cups cherry tomatoes, halved

1 medium onion, diced

3 cloves garlic, minced

1 cup fresh basil leaves, roughly chopped

2 cups chicken broth (low sodium)

1 cup brown rice

2 tablespoons olive oil

1 teaspoon dried oregano

Prepare the Chicken: Season the chicken breasts with salt, pepper, and dried oregano on both sides.

    Sear the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and sear for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

        Add Tomatoes and Broth: Add the halved cherry tomatoes to the skillet, followed by the chicken broth. Stir everything together and bring to a simmer.
