1 lb (450g) fresh shrimp, peeled and deveined

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon lime zest

Salt and pepper to taste

8 small corn tortillas

1 cup red cabbage, thinly sliced

1 avocado, sliced

½ cup fresh cilantro, chopped

Lime wedges for serving

½ cup pico de gallo or salsa verde (for topping)

Instructions
 

In a large mixing bowl, combine the shrimp, olive oil, smoked paprika, cumin, garlic powder, lime zest, salt, and pepper. Toss well until all shrimp are evenly coated.

    Preheat a grill or grill pan over medium-high heat. Once hot, add the shrimp in a single layer. Grill for 2-3 minutes on each side until they turn pink and opaque. Avoid overcrowding the pan; grill in batches if necessary.

      While the shrimp grills, warm the corn tortillas. You can do this on the grill for about 30 seconds on each side or in a dry skillet over medium heat until soft and warm.

        Assemble the tacos by placing a few grilled shrimp on each tortilla. Top with sliced red cabbage, avocado, and fresh cilantro.

          Finish with a generous spoonful of pico de gallo or salsa verde for added flavor.

            Serve immediately with lime wedges on the side for squeezing over the tacos.
