2 boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup fresh basil leaves

1/2 cup sunflower seeds (or pine nuts)

1/2 cup grated Parmesan cheese

1/2 cup olive oil

2 garlic cloves, minced

1 teaspoon lemon juice

Salt and pepper to taste

1 bell pepper, cut into chunks (any color)

1 red onion, cut into chunks

Wooden skewers, soaked in water for 30 minutes

Instructions
 

Prepare the Pesto: In a food processor, combine the basil leaves, sunflower seeds, Parmesan cheese, minced garlic, and lemon juice. Blend until finely chopped.

    Add Olive Oil: With the food processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy. Season with salt and pepper to taste.

      Marinate the Chicken: In a large bowl, combine the chicken cubes with half of the prepared pesto. Mix well to coat all pieces. Let marinate for at least 30 minutes in the refrigerator (you can marinate it for up to 2 hours for more flavor).

        Assemble the Skewers: Thread the marinated chicken, bell pepper chunks, and onion chunks onto the soaked skewers, alternating between ingredients until the skewers are filled.

          Grill the Skewers: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.

            Drizzle Remaining Pesto: Once cooked, remove the skewers from the grill and drizzle the remaining pesto over them for extra flavor.

              Serve: Allow the skewers to rest for a few minutes before serving.
