2 cups cherry tomatoes, halved

1 cup heirloom tomatoes, diced

1 large ball of burrata cheese

1 cup fresh basil leaves, torn

1/4 cup extra virgin olive oil

2 tablespoons balsamic glaze

Salt and pepper, to taste

1 cup cooked quinoa or farro (for protein)

1/4 cup pine nuts, toasted (for crunch)

Instructions
 

In a medium bowl, combine the halved cherry tomatoes and diced heirloom tomatoes.

    Drizzle with half of the olive oil, season with salt and pepper, and toss gently to combine. Let it sit for 10 minutes to marinate.
