1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish

Instructions

Preheat your oven to 375°F (190°C).

Cook the jumbo pasta shells in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside to cool slightly.

In a mixing bowl, combine the ricotta cheese, 1/2 cup of mozzarella cheese, chopped spinach, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

Spoon the cheese mixture into each cooked pasta shell, filling them generously.

In a 9x13 inch baking dish, spread 1 cup of marinara sauce evenly on the bottom of the dish.

Arrange the stuffed shells in the dish, side by side. Pour the remaining marinara sauce over the top of the shells.

Sprinkle the remaining 1/2 cup of mozzarella cheese on top of the sauce.

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
