4 large portobello mushrooms, stems removed

1 cup cooked quinoa

1/2 cup cherry tomatoes, halved

1/2 cup spinach, chopped

1/4 cup feta cheese, crumbled

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Clean the portobello mushrooms with a damp cloth, and place them on a baking sheet, gills facing up.

      In a skillet over medium heat, add olive oil and minced garlic, sautéing until fragrant (about 1 minute).

        Stir in the chopped spinach and cook until wilted (approximately 2-3 minutes).

          In a large mixing bowl, combine the cooked quinoa, sautéed spinach, cherry tomatoes, feta cheese, red pepper flakes, balsamic vinegar, salt, and pepper. Mix until thoroughly combined.

            Spoon the quinoa mixture generously into each portobello mushroom cap, packing it lightly.

              Drizzle a little more olive oil over the stuffed mushrooms for flavor and moisture.

                Bake the mushrooms in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the stuffing is heated through.

                  Remove from the oven and let them sit for a few minutes before serving.

                    Garnish with fresh basil leaves and serve warm.
