4 large bell peppers (any color)

1 cup quinoa, rinsed and drained

2 cups vegetable broth

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup cherry tomatoes, halved

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

½ cup shredded cheese (cheddar or mozzarella)

Fresh cilantro or parsley, for garnish

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Quinoa: In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

      Prepare the Bell Peppers: While the quinoa is cooking, carefully slice the tops off the bell peppers and remove the seeds and membranes. If needed, you can slightly trim the bottoms to help them stand upright.

        Mix the Filling: In a large bowl, combine the cooked quinoa, black beans, corn, cherry tomatoes, cumin, smoked paprika, garlic powder, cayenne pepper (if using), and salt and pepper. Mix well until everything is evenly combined.

          Stuff the Peppers: Spoon the quinoa mixture into each bell pepper, packing it lightly. Place the stuffed peppers upright in a baking dish.

            Top with Cheese: Sprinkle the shredded cheese on top of each stuffed pepper.

              Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.

                Garnish and Serve: Remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with fresh cilantro or parsley before serving.
