2 cups fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

2 cups all-purpose flour

2 tablespoons baking powder

½ teaspoon salt

¼ cup unsalted butter, cold and cubed

1 cup heavy cream, divided

1 teaspoon vanilla extract

2 tablespoons powdered sugar (for whipped cream)

Instructions
 

In a medium bowl, combine the sliced strawberries with granulated sugar. Gently toss to coat and let sit for about 30 minutes to allow the juices to release.

    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

      In a large bowl, whisk together the all-purpose flour, baking powder, and salt.

        Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.

          Pour ¾ cup of heavy cream and the vanilla extract into the flour mixture. Stir gently with a fork until the dough comes together. If the dough is too dry, add a little more heavy cream as needed.

            Turn the dough onto a lightly floured surface and knead gently a few times until smooth. Pat into a 1-inch thick rectangle. Cut out rounds using a 2.5-inch cutter and place them on the prepared baking sheet.

              Bake for 15-18 minutes, or until the tops are lightly golden. Remove from the oven and let cool slightly.

                While the shortcakes are cooling, whip the remaining heavy cream with the powdered sugar until soft peaks form.

                  To assemble, slice each shortcake in half horizontally. Spoon some of the macerated strawberries onto the bottom half, top with a dollop of whipped cream, and place the top half back on. Add more strawberries and whipped cream as desired.
