2 cups fresh strawberries, hulled and sliced

2 tablespoons sugar

1 cup heavy cream

1 cup sweetened condensed milk

1 teaspoon vanilla extract

1 cup crushed graham crackers

4 tablespoons unsalted butter, melted

Optional: whipped cream and additional strawberries for topping

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries and sugar. Toss to coat the berries and let them sit for about 15 minutes until they release their juices.

    Make the Ice Cream Base: In a separate large bowl, whisk together the heavy cream, sweetened condensed milk, and vanilla extract until well combined and smooth.

      Combine Strawberries and Cream: Gently fold the macerated strawberries (with their juices) into the ice cream mixture until evenly distributed.

        Prepare Graham Cracker Base: In another bowl, mix the crushed graham crackers with melted butter until the mixture resembles wet sand.

          Assemble the Bars: Line a rectangular dish (or a 9x9 inch square pan) with parchment paper. Press half of the graham cracker mixture evenly into the bottom of the dish to form the base.

            Add Ice Cream Layer: Pour the strawberry ice cream mixture on top of the graham cracker base, spreading it evenly.

              Top and Freeze: Sprinkle the remaining graham cracker mixture over the top of the ice cream layer. Cover the dish with plastic wrap and freeze for at least 6 hours or until solid.

                Slice and Serve: Remove the dish from the freezer and let it sit at room temperature for about 5 minutes before slicing into bars.
