Ingredients
  

2 cups fresh mushrooms (cremini or shiitake), sliced

4 large eggs

1 tablespoon soy sauce (low sodium)

1 tablespoon sesame oil

1 garlic clove, minced

1 teaspoon ginger, grated

1 green onion, chopped (for garnish)

Salt and pepper to taste

Optional: 1 teaspoon chili flakes or Sriracha for spice

Instructions
 

In a large skillet or wok, heat the sesame oil over medium heat.

    Add the minced garlic and grated ginger to the pan, stirring constantly for about 30 seconds until fragrant.

      Toss in the sliced mushrooms and stir-fry for about 5-7 minutes, or until they're soft and slightly golden.

        Push the mushrooms to one side of the skillet. Crack the eggs into the other side, scrambling them gently until they're just cooked through.

          Combine the scrambled eggs with the mushrooms in the pan. Add soy sauce, salt, pepper, and optional chili flakes or Sriracha for heat. Stir all ingredients together until well mixed.

            Remove from heat and garnish with chopped green onions.
