1 pound flank steak

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 bell pepper (any color), sliced

1 onion, sliced

2 cloves garlic, minced

Juice of 1 lime

8 small flour tortillas

Fresh cilantro, for garnish

Sliced avocado, for serving

Sour cream, for serving

Instructions
 

Marinate the Steak: In a bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Rub this mixture all over the flank steak. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

    Cook the Steak: Preheat a grill or grill pan over medium-high heat. Once hot, add the flank steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

      Sauté the Vegetables: While the steak is resting, heat a tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and bell pepper; sauté for about 5-7 minutes until they are tender and slightly caramelized. During the last minute of cooking, add the minced garlic and cook until fragrant.

        Slice the Steak: After resting, slice the flank steak against the grain into thin strips.

          Combine and Season: Toss the sliced steak with the sautéed vegetables in the skillet. Squeeze the lime juice over the top and stir to combine everything. Allow the mixture to heat through for another couple of minutes.

            Serve: Warm the tortillas in a dry skillet or microwave for about 15-20 seconds until pliable. Fill each tortilla with the steak and vegetable mixture and top with fresh cilantro, sliced avocado, and a dollop of sour cream.
