8 oz linguine or spaghetti

1 cup asparagus, trimmed and cut into 2-inch pieces

1 cup snap peas, ends trimmed

1 cup cherry tomatoes, halved

1 small zucchini, diced

2 cloves garlic, minced

1/4 cup fresh basil, chopped

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the linguine or spaghetti according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water and then drain the pasta.

    Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and cook until fragrant, about 30 seconds.

      Add the Asparagus and Zucchini: Stir in the asparagus and zucchini. Sauté for about 3-4 minutes, until slightly tender but still vibrant.

        Incorporate Remaining Vegetables: Add the snap peas and cherry tomatoes to the skillet. Cook for another 3-4 minutes, stirring occasionally, until the tomatoes start to soften.

          Combine with Pasta: Add the drained pasta to the skillet with the sautéed vegetables. Pour in the reserved pasta water, lemon juice, and chopped basil. Gently toss everything together until well combined. Cook for an additional 2 minutes to warm through.

            Season and Serve: Season with salt and pepper to taste. If desired, sprinkle with grated Parmesan cheese before serving.
