8 rice paper wrappers

1 cup cooked vermicelli noodles

1 cup fresh spinach, chopped

1 cup cabbage, shredded (red or green)

1 carrot, julienned

1 bell pepper, thinly sliced (any color)

1 cucumber, julienned

½ cup fresh herbs (mint and basil)

1 avocado, sliced

¼ cup sesame seeds (toasted)

1 cup bean sprouts (optional)

Salt and pepper, to taste

Prepare the Filling: In a large bowl, combine the cooked vermicelli noodles, spinach, cabbage, carrot, bell pepper, cucumber, fresh herbs, and bean sprouts. Season with salt and pepper to taste. Mix well to combine.

    Soften Rice Paper: Fill a large, shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it's malleable but not too soft. Lay it flat on a clean surface.

      Assemble the Roll: Place a small handful (about 2-3 tablespoons) of the filling mixture in the center of the rice paper wrapper. Add a few slices of avocado on top and sprinkle with toasted sesame seeds.

        Roll it Up: Fold the sides of the rice paper over the filling, then carefully roll it away from you, tucking the ingredients tightly as you go. Repeat this process for the remaining wrappers and filling.

          Serve: Arrange the spring rolls on a serving platter. Serve fresh with a dipping sauce such as a soy and peanut sauce or sweet chili sauce for added flavor.
