3 large eggs

1 cup fresh spinach, chopped

1/4 cup feta cheese, crumbled

1 small onion, finely chopped

1 clove of garlic, minced

1/4 teaspoon black pepper

1/4 teaspoon salt

1 tablespoon olive oil

Optional: cherry tomatoes, halved for garnish

Instructions
 

In a medium bowl, whisk together the eggs, black pepper, and salt until well combined. Set aside.

    Heat the olive oil in a non-stick frying pan over medium heat.

      Add the chopped onion and sauté for about 3-4 minutes until soft and translucent.

        Add the minced garlic and chopped spinach to the pan, stirring for another 2 minutes until the spinach wilts.

          Pour the egg mixture over the spinach and onion in the pan, tilting the pan to ensure even distribution.

            Cook on medium-low heat for about 4-5 minutes, or until the edges begin to set.

              Sprinkle the crumbled feta cheese over one half of the omelette.

                Using a spatula, carefully fold the other half of the omelette over the cheese.

                  Cook for an additional 2 minutes until the cheese begins to melt and the omelette is cooked through.

                    Gently slide the omelette onto a plate.
