1 cup fresh spinach, chopped

1 cup cooked and chopped kale

1/2 cup ricotta cheese

1/2 cup feta cheese, crumbled

1/4 cup cream cheese, softened

1/4 cup green onions, finely chopped

1 clove garlic, minced

1 teaspoon dried dill

Salt and pepper to taste

4 large flour tortillas

1 tablespoon olive oil

1 cup shredded mozzarella cheese

Instructions
 

In a mixing bowl, combine the fresh spinach, chopped kale, ricotta cheese, feta cheese, cream cheese, green onions, garlic, and dried dill. Mix well until all the ingredients are thoroughly combined. Season with salt and pepper to taste.

    Heat a large skillet over medium heat and add the olive oil.

      Place one tortilla in the skillet and spread a quarter of the spinach and cheese mixture evenly over half of the tortilla.

        Sprinkle a quarter of the shredded mozzarella cheese over the filling, then fold the tortilla in half to create a semi-circle.

          Cook for about 3-4 minutes, or until the bottom is golden brown. Carefully flip the tortilla and cook the other side for another 3-4 minutes until the cheese is melted and the tortilla is crispy.

            Remove the Spanakopita Melt from the skillet and repeat the process with the remaining tortillas and filling mixture.

              Once all the melts are cooked, slice them in half and arrange them on a serving platter.
