1 cup fresh spinach, chopped

1 cup ricotta cheese

1 cup feta cheese, crumbled

1/2 cup grated mozzarella cheese

1/4 cup fresh dill, chopped

1/4 cup green onions, finely sliced

1 tablespoon lemon juice

Salt and pepper to taste

4 large flatbreads or pita breads

2 tablespoons olive oil

Zest of 1 lemon

1 egg, beaten (for egg wash)

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, combine the chopped spinach, ricotta cheese, feta cheese, mozzarella cheese, fresh dill, green onions, lemon juice, lemon zest, salt, and pepper. Mix well until all ingredients are combined into a creamy filling.

      Lay out the flatbreads or pita breads on the prepared baking sheet.

        Spoon a generous amount of the spinach and cheese mixture onto one half of each flatbread, leaving a small border around the edges.

          Fold the flatbreads over to create a half-moon shape, pressing the edges together to seal. Brush the tops with the beaten egg for a golden finish.

            Drizzle the olive oil over the folded flatbreads for extra flavor and crispiness.

              Bake in the preheated oven for 15-20 minutes, or until the flatbreads are golden brown and crispy.

                Once out of the oven, allow them to cool slightly before slicing in half for serving.
