2 cups cooked chicken breast, shredded

1 cup Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon honey

1 cup cucumbers, diced

1/2 cup radishes, thinly sliced

1/4 cup red onion, finely chopped

1/4 cup fresh dill, chopped

1 cup apples, diced (preferably a tart variety like Granny Smith)

1/2 cup walnuts, chopped

Salt and pepper, to taste

4 cups mixed salad greens (arugula, spinach, and kale)

Fresh lemon wedges, for serving

Instructions
 

In a large bowl, mix together the Greek yogurt, Dijon mustard, and honey until smooth. This will be your creamy dressing.

    Add the shredded chicken to the bowl and fold it into the dressing until well coated.
