2 cups fresh snap peas, trimmed

1 cup cherry tomatoes, halved

1/2 cup crumbled feta cheese

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon honey

1/4 teaspoon garlic powder

Salt and pepper to taste

Fresh mint leaves for garnish

Instructions
 

In a large pot of boiling salted water, blanch the snap peas for about 2 minutes until bright green and slightly tender.

    Immediately transfer the peas to a bowl of ice water to stop the cooking process. Drain and set aside.

      In a large bowl, combine the halved cherry tomatoes and cooled snap peas.

        In a small bowl, whisk together the olive oil, fresh lemon juice, honey, garlic powder, salt, and pepper until well combined.

          Drizzle the dressing over the snap peas and tomatoes, tossing gently to coat.

            Fold in the crumbled feta cheese, being careful not to break it too much.

              Let the salad sit for about 10 minutes to allow the flavors to meld.

                Serve chilled or at room temperature, garnished with fresh mint leaves sprinkled on top.
