1.5 lbs baby potatoes

4 tablespoons olive oil

4 cloves garlic, minced

2 tablespoons fresh thyme, chopped

1 tablespoon fresh rosemary, chopped

½ teaspoon smoked paprika

Salt and pepper to taste

¼ cup grated Parmesan cheese (optional)

Fresh parsley for garnish

Boil the Potatoes: Place the baby potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil and cook for about 15-20 minutes or until fork-tender. Drain and let them cool slightly.

    Preheat Oven: While the potatoes are cooling, preheat your oven to 450°F (230°C).

      Smash the Potatoes: Line a baking sheet with parchment paper. Once the potatoes are cool enough to handle, use the bottom of a glass or a potato masher to gently smash each potato until they're about ½ inch thick, keeping them intact.

        Flavor the Oil: In a small saucepan, heat the olive oil over medium heat. Add the minced garlic, and sauté for about 1-2 minutes until fragrant but not browned. Remove from heat and stir in the chopped thyme, rosemary, smoked paprika, salt, and pepper.

          Coat the Potatoes: Pour the garlic herb oil over the smashed potatoes, ensuring they are well coated. Use a brush to spread it evenly, or simply spoon it over the potatoes.

            Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes or until the edges are crispy and golden.

              Add Cheese (Optional): If desired, sprinkle grated Parmesan cheese over the potatoes in the last 5 minutes of baking for an extra layer of flavor.

                Garnish and Serve: Remove from the oven and let cool for a minute. Garnish with freshly chopped parsley before serving.
