1 lb ground beef (80/20 for optimal juiciness)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

8 small flour tortillas

1 cup shredded cheddar cheese

1 cup iceberg lettuce, finely shredded

1 medium tomato, diced

1/2 cup pickles, chopped

1/4 cup mayonnaise

2 tablespoons ketchup

2 teaspoons yellow mustard

Cooking oil for frying

Prepare the Sauce: In a small bowl, mix together mayonnaise, ketchup, and mustard. Set aside.

    Season the Beef: In a large bowl, combine the ground beef with garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently, being careful not to overwork the meat.

      Heat the Pan: In a large skillet, add a tablespoon of cooking oil and heat over medium-high heat until shimmering.

        Cook the Smashburger: Take a handful of the seasoned beef and form it into a ball (about the size of a golf ball). Place it in the hot skillet and immediately smash it down with a spatula until it gets nice and crispy. Cook for about 2-3 minutes on one side until browned. Flip, sprinkle some cheese on top, and cook for another minute until the cheese is melted. Repeat with the remaining beef.

          Warm the Tortillas: In a separate pan, lightly warm the flour tortillas for about 30 seconds on each side until pliable.
