1 lb ground beef (80/20 blend)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded cheddar cheese

1/2 cup pickles, sliced

1/2 cup diced tomatoes

1 avocado, diced

1/4 cup chopped fresh cilantro

1/4 cup sour cream

Hot sauce (optional)

Instructions
 

Prepare the Beef: In a bowl, season the ground beef with garlic powder, onion powder, salt, and pepper. Mix well but do not overwork the meat.

    Cook the Patties: Preheat a large cast-iron skillet or griddle over medium-high heat. Divide the seasoned ground beef into 8 equal portions.

      Smash Them Down: Place each portion on the skillet, press down firmly with a spatula to flatten them to about 1/4 inch thick. Sear for about 2-3 minutes until a crust has formed, then flip and immediately top each patty with shredded cheddar cheese. Cook for another 1-2 minutes to melt the cheese.

        Warm the Tortillas: In a separate dry skillet, warm the tortillas over medium heat for 30 seconds on each side until soft and pliable.

          Assemble the Tacos: On each tortilla, place a smashed burger patty with melted cheese. Top with sliced pickles, diced tomatoes, diced avocado, and chopped cilantro.

            Finish with Sauce: Drizzle sour cream over the top and add hot sauce if desired for an extra kick.

              Serve and Enjoy: Fold the tortillas over and serve immediately while hot.
