1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup olive oil

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

2 cloves garlic, minced

Salt and pepper, to taste

1 large bell pepper (any color), cut into 1-inch pieces

1 small red onion, cut into wedges

Marinate the Chicken: In a bowl, whisk together the olive oil, lemon juice, lemon zest, dill, minced garlic, salt, and pepper. Add the chicken cubes to the bowl and mix well to coat. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for richer flavor.

    Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Begin assembling the skewers by threading a piece of chicken followed by a piece of bell pepper and then a red onion wedge. Repeat until all the ingredients are used, finishing with chicken on top.
