Ingredients
  

1 lb boneless, skinless chicken breasts, cut into small cubes

2 cups fresh corn kernels (about 2-3 ears of corn) or 1 can of corn, drained

1 teaspoon smoked paprika

1 teaspoon cumin

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

8 small corn tortillas

1 avocado, diced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: diced red onion and feta cheese for garnish

Instructions
 

In a large skillet over medium heat, heat the olive oil.

    Add the cubed chicken to the skillet and season it with smoked paprika, cumin, garlic powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

      Add the corn to the skillet and cook for an additional 3-5 minutes until the corn is tender and slightly caramelized.

        While the chicken and corn are cooking, warm the corn tortillas in a dry pan over low heat for about 30 seconds on each side until pliable.

          To assemble the tacos, place a generous spoonful of the chicken and corn mixture onto each tortilla.

            Top with diced avocado, cherry tomatoes, chopped cilantro, and any additional garnishes like red onion and feta cheese, if desired.

              Serve each taco with a wedge of lime on the side for squeezing over the top.
