Ingredients
  

1 lb shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste

1 cup fresh pineapple, diced

1/4 cup red onion, finely chopped

1 jalapeño, deseeded and minced

1/4 cup fresh cilantro, chopped

8 small corn or flour tortillas

1 avocado, sliced

Lime wedges, for serving

Optional: Sour cream or Greek yogurt for topping

Instructions
 

Marinate the Shrimp: In a bowl, combine the shrimp, olive oil, minced garlic, smoked paprika, cumin, chili powder, salt, and pepper. Mix thoroughly to coat the shrimp and let it marinate for about 15-20 minutes.

    Sauté the Shrimp: Heat a skillet over medium-high heat. Once hot, add the marinated shrimp and cook for about 2-3 minutes on each side until they are pink and opaque. Remove from heat and set aside.

      Prepare the Pineapple Salsa: In a separate bowl, mix the diced pineapple, red onion, jalapeño, and cilantro. Season with salt and pepper to taste.

        Warm the Tortillas: In the same skillet, lightly toast the tortillas for about 30 seconds on each side until warmed through and slightly charred (optional).

          Assemble the Tacos: Place a few shrimp in each tortilla, topped with the pineapple salsa and a slice of avocado.

            Serve: Garnish with a squeeze of lime juice and add a dollop of sour cream or Greek yogurt if desired.
