1 pound medium shrimp, peeled and deveined

1 ripe mango, diced

2 ripe avocados, diced

1/2 red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, deseeded and minced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper to taste

Begin by preparing the shrimp. In a medium saucepan, bring water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and transfer the shrimp to an ice bath to stop cooking. Once cooled, chop the shrimp into bite-sized pieces.

    In a large mixing bowl, combine the diced mango, diced avocados, chopped red onion, diced red bell pepper, and minced jalapeño.

      Add the chopped shrimp to the bowl with the other ingredients.

        In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Drizzle this dressing over the salsa mixture.

          Gently toss all the ingredients together until well combined, being careful not to mash the avocado.

            Add the fresh cilantro and give it one last gentle fold to mix.

              Taste and adjust seasoning with more lime juice, salt, or pepper if necessary.
