1 lb shrimp, peeled and deveined

2 cups snow peas, trimmed

1 red bell pepper, sliced

1 cup carrots, julienned

3 cloves garlic, minced

1 tablespoon ginger, minced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon chili flakes (optional)

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt and pepper to taste

2 tablespoons vegetable oil for stir-frying

Prepare the Ingredients: Start by peeling and deveining the shrimp, then set them aside. Trim the snow peas, slice the red bell pepper, and julienne the carrots.

    Heat the Pan: In a large wok or skillet, heat the vegetable oil over medium-high heat until shimmering.

      Cook the Shrimp: Add the shrimp to the pan in a single layer. Cook for about 2-3 minutes until they turn pink. Remove the shrimp from the pan and set aside.

        Sauté the Vegetables: In the same pan, add minced garlic and ginger. Stir for about 30 seconds until fragrant, then add the sliced bell pepper, carrots, and snow peas. Stir-fry for 3-4 minutes until they become tender-crisp.

          Combine and Add Sauce: Return the cooked shrimp back to the pan. Pour in the soy sauce, sesame oil, and chili flakes (if using). Stir to combine and heat through for another minute.

            Thicken the Sauce: Add the cornstarch mixture to the pan while stirring constantly. The sauce will thicken nicely. Cook for an additional minute, adjusting with salt and pepper to taste.

              Serve Hot: Once everything is combined and heated through, remove from heat.
