4 large carrots, shredded

1 cup red cabbage, finely shredded

1/2 cup bell peppers (mixed colors), thinly sliced

1/4 cup scallions, chopped

1/4 cup fresh cilantro, roughly chopped

1/4 cup raisins or dried cranberries

1/4 cup sunflower seeds

2 tablespoons sesame oil

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

Salt and pepper to taste

Instructions
 

Begin by preparing all the vegetables: shred the carrots, finely shred the red cabbage, thinly slice the bell peppers, chop the scallions, and roughly chop the cilantro.

    In a large mixing bowl, add the shredded carrots, red cabbage, bell peppers, scallions, cilantro, raisins, and sunflower seeds. Toss them together to mix.

      In a separate small bowl, whisk together the sesame oil, rice vinegar, honey (or maple syrup), salt, and pepper until well combined to create the dressing.

        Pour the dressing over the salad mixture and toss gently until all vegetables are evenly coated.

          Let the salad sit for about 10 minutes to allow the flavors to meld together before serving.
