4 medium carrots, peeled and shredded

1 cup red cabbage, thinly sliced

1 cup green cabbage, thinly sliced

1 bell pepper (red or yellow), julienned

1/2 cup fresh cilantro, chopped

1/4 cup toasted sunflower seeds

3 tablespoons sesame oil

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

1 clove garlic, minced

Salt and pepper to taste

In a large mixing bowl, add the shredded carrots, red cabbage, green cabbage, and bell pepper. Mix them together until well combined.

    In a small bowl, whisk together the sesame oil, apple cider vinegar, honey (or maple syrup), minced garlic, salt, and pepper to create a dressing.

      Pour the dressing over the mixed vegetables and toss gently until everything is evenly coated in the dressing.

        Add the chopped cilantro and toasted sunflower seeds to the salad, and toss again to combine.

          Let the salad sit for about 10-15 minutes to allow flavors to meld.

            Serve chilled or at room temperature.
