Ingredients
  

2 tablespoons olive oil

1 medium onion, finely chopped

1 red bell pepper, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder (adjust to your spice preference)

1 can (14 oz) diced tomatoes

4 large eggs

Salt and pepper to taste

Fresh parsley or cilantro, chopped for garnish

Feta cheese, crumbled (optional)

Crusty bread for serving

Instructions
 

Heat the olive oil in a large, deep skillet over medium heat. Add the chopped onion and sauté until softened and translucent, about 5 minutes.

    Add the diced red bell pepper and minced garlic to the skillet. Continue to cook for another 3-4 minutes, stirring occasionally until the peppers are softened.

      Stir in the ground cumin, smoked paprika, and chili powder, cooking for an additional minute until the spices are fragrant.

        Pour in the canned diced tomatoes (with their juices) and season with salt and pepper. Stir everything together and bring the mixture to a simmer. Reduce heat to low and let it cook for about 10 minutes to allow the flavors to meld and the sauce to thicken slightly.

          Make small wells in the tomato mixture with the back of a spoon and gently crack an egg into each well. Cover the skillet with a lid and cook for 5-7 minutes, or until the egg whites are set but the yolks remain runny. Adjust cooking time based on how you prefer your eggs.

            Remove the skillet from heat and sprinkle with chopped parsley or cilantro. If using, add crumbled feta cheese on top for extra creaminess.

              Serve hot with slices of crusty bread for dipping.
