Ingredients

1 lb breakfast sausage (mild or spicy, based on preference)

1/4 cup all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

1 package (1 lb) puff pastry (2 sheets), thawed

1 cup shredded cheddar cheese

1 egg (for egg wash)

Instructions

Cook the Sausage: In a large skillet over medium heat, add the breakfast sausage. Cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes).

Make the Gravy: Once the sausage is cooked, sprinkle the flour over it and stir to combine. Cooking for about 1 minute to eliminate raw flour taste. Gradually whisk in the milk, ensuring no lumps form.

Season the Gravy: Add garlic powder, onion powder, salt, and pepper. Bring the mixture to a gentle simmer, cooking until the gravy thickens (about 5-8 minutes). Remove from heat and let it cool slightly.

Prepare Puff Pastry: Preheat the oven to 400°F (200°C). On a floured surface, roll out one sheet of puff pastry. Cut it to fit a 9-inch pie dish, making sure there’s an overhang.

Assemble the Pie: Pour the sausage gravy into the prepared puff pastry in the pie dish, then sprinkle the shredded cheddar cheese evenly over the top. Roll out the second puff pastry sheet and cover the pie, sealing the edges by crimping them together. Cut a few slits in the top to allow steam to escape.

Egg Wash: Whisk the egg in a small bowl and brush it over the top of the pastry to create a golden finish.

Bake: Place the assembled pie in the preheated oven and bake for 25-30 minutes or until the pastry is golden brown and puffed.

Cool and Serve: Once baked, let the pie sit for about 10 minutes before slicing to allow the gravy to set. Serve warm.
