1 pound breakfast sausage (any variety you prefer)

1/4 cup all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

1 package (2 sheets) frozen puff pastry, thawed

1 large egg, beaten (for egg wash)

Fresh parsley, chopped (for garnish)

Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Stir occasionally to breaking it up into small pieces.

    Make the Gravy: Once the sausage is cooked, sprinkle the flour over the sausage and stir well to combine. Cook for an additional 2 minutes to cook off the raw flour taste.

      Add the Milk: Gradually whisk in the milk, making sure to incorporate it without lumps. Continue stirring until the gravy thickens, about 5-7 minutes. Add garlic powder, onion powder, black pepper, and cayenne pepper (if using). Adjust seasoning to taste. Remove from heat.

        Preheat Oven: Preheat your oven to 400°F (200°C).

          Prepare Puff Pastry: On a floured surface, roll out one sheet of puff pastry to fit your pie dish (about 9 inches in diameter). Transfer it to a greased pie dish or baking sheet.

            Fill the Pastry: Pour the sausage gravy mixture into the prepared puff pastry base, leveling it off with a spatula.

              Top with Pastry: Roll out the second puff pastry sheet and cut it into strips or leave it whole with a few slits for vents. Carefully place it over the gravy filling. Seal the edges by pressing down with a fork. Brush the top with the beaten egg to give it a golden finish.

                Bake the Pie: Bake in the preheated oven for 25-30 minutes, or until the puff pastry is golden brown and flaky.
