1 pound breakfast sausage (mild or spicy, based on preference)

8 large eggs

1 cup milk

2 cups shredded sharp cheddar cheese

1 cup diced bell peppers (mixed colors)

1 cup diced onion

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

4 cups cubed day-old bread (such as French or sourdough)

Fresh parsley for garnish (optional)

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and cooked through, about 8-10 minutes. Drain excess fat if necessary and set aside.

      Sauté Vegetables: In the same skillet, add the diced onions and bell peppers. Sauté for 3-5 minutes until they're soft and fragrant. Remove from heat and let cool slightly.

        Mix Egg Base: In a large mixing bowl, whisk together the eggs, milk, garlic powder, oregano, salt, and pepper until well combined.

          Combine Ingredients: Add the cubed bread, cooked sausage, sautéed vegetables, and 1.5 cups of cheese to the egg mixture. Gently fold everything together until the bread is well coated in the egg mixture.

            Transfer to Baking Dish: Grease a 9x13 inch baking dish with non-stick spray or butter. Pour the mixture into the dish evenly, and sprinkle the remaining 0.5 cup of cheese over the top.

              Bake: Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the top is golden brown.
